For the past 2 months, I have been participating in a gluten/wheat free diet.

Looking back and realizing I've actually gone 2 months without eating
this, this, this, and sadly this :(
is uhhhhmazing
and should tell you something about my will power.
(that I have it.. at all... I'm surprised to)
And honestly, and even more surprising, it hasn't been as hard as I had anticipated.
Yes - most things that are delicious in this world are filled to the brim with
wheat and gluten and yessssss, I miss them.
BUT, hip-hip-hooray!
Most wheat and gluten filled delicious treats actually
have a wheat and gluten-free delicious treat cousin waiting to be NOMbled.
So, taste buds satisfied. Will power discovered. Pats on the back all around.
How do I feel, you ask?
FAN-TAS-MAZING.
Truly. I feel great! I suppose I won't know for certain that I'm allergic/intolerant until I try to incorporate wheat/gluten back into my diet. I am going to do this in another month, but until then, I shall continue on with gluten/wheat free treats.
A website I've been frequenting for inspiration is the Gluten Free Goddess. I'm always super impressed. She is not only an epically talented and creative chef, but she is also a gifted writer, photographer, and all-around entertaining. She has a recipe for a Gluten-Free Peach Crisp that looks amaaaazeballs

and will most certainly be devoured by excited teefs and mouvs when I make it tonight.
I love baking,
(though I love the finished product a leeeeetle bit more.. am I right, or am I right? right?)
so it made me sad to think I'd have no reason to bake food I couldn't eat.
(I'm nice to my man, but baking him cookies so he can enjoy them,
and I get to watch him enjoy them... I'm not that nice.)
I did some searching through the baking aisle of Whole Foods, and came across Pamela's Baking & Bread Mix. I am loving this mix. So far, I've made scones, strawberry pancakes, plans to make a cake and I'll be using it in my Peach Crisp!
It tastes a lot like Bisquik when in batter form, and I imagine it functions pretty much the same whilst in the presence of heat (oven/stove).
I think the saddest part of this health experiment
is that there really is no proper substitute for a good, crisp, yummy beer.
There are definitely gluten/wheat free beers, but I haven't gotten around to trying any.
I've been opting for wine or hard cider when out, but I am really curious about
trying Redbridge, which is made by Anheuser-Busch.
(Gluten-Free Bud Light?..)
It apparently tastes like a light, crisp Pilsner (my fave!)
so I shall be trying it soon and will report back!
I will update this post with pictures of the finished Peach Crisp later. In the meantime, I had better get to baking it because it sounds so good I want to eat it right now...
